Chewy oatmeal cookies are just about everyone’s favorite. These are so easy – no creaming butter and sugar, no measuring and sifting flour, no adding leavening or spices. Simple and quick, yet they are absolutely homemade.
Preheat oven to 350 degrees
In a large mixing bowl, beat together thoroughly:
- 2 sticks (one cup) very soft butter
- 1/2 cup pure maple syrup
- 2 eggs
- 1 teaspoon vanilla
Add 1 package BBM Spice Cake Mix, stirring until combined. Add 3 cups oats (old fashioned or quick oats, not instant.)
Optional Ingredients:
- Fold in 1 cup raisins or dried cranberries (or other dried fruit)
- Add 1 cup walnuts or pecans, chopped
Drop cookie dough in rounded teaspoonfuls (or use a small cookie scoop) onto a prepared cookie sheet (greased or lined with parchment paper.) Space cookies two inches apart. Bake about 10 minutes, turning cookie sheet halfway through the baking time. Cool cookies on rack. Makes about 4 dozen, depending on size of cookie.
